
Chicken:
2 chicken breasts
2 eggs
1/2 cup white flour
1/4 cup corn flour
1 tbsp pink salt
1 tbsp black pepper
Sauce:
2 tbsp of vegetable oil
2 cloves of garlic
Minced ginger (to taste)
1 tbsp chili flakes
2 tbsp soy sauce
Juice of 2 fresh oranges
Zest of 1 orange
1 tbsp apple cider vinegar
3 tbsp sweet chili sauce
2 tbsp brown sugar
2 tbsp corn flour mix to thicken sauce
In a deep fryer or a frying pan heat sufficient oil to deep fry the chicken.
Cut the chicken breasts in cubes.
In a bowl beat the eggs and mix with the chicken cubes.
Combine white flour and corn flour in a bowl and coat the chicken cubes in this mixture before deep frying for about 5 minutes.
Meanwhile, in a hot wok add vegetable oil, soy sauce, orange juice, orange zest, apple cider vinegar, sweet chili sauce and brown sugar. Heat while stirring vigorously.
Add corn syrup to thicken sauce and when it reaches desired consistency, incorporate fried chicken cubes in the sauce and mix well.
Serve with steamed rice and garnish with chopped green onions and slices of orange.
